SOUTHERN PEANUT BRITTLE RECIPE
Peanut Brittle is a Southern Favorite, especially here in the Peanut Capitol of the world!
I’ve been making this quick and easy candy for years. You can make it in a double boiler, but the microwave (yes, I said the microwave) makes this tasty treat even faster! My handwritten recipe is dated “1990,” but I’ve been enjoying this southern peanut brittle recipe since i was old enough to eat. It’s always been a favorite in South Alabama!
Ingredients:
- 2 cups raw peanuts (you can buy these in the produce section already bagged – make sure to purchase raw peanuts)
- 1 cup sugar
- 1/2 cup light Karo Syrup
- 1 teaspoon of vanilla
- 1 1/2 teaspoons of baking soda
- 1 Tablespoon of butter
Directions:
- Butter a large cookie sheet.
- In a microwave safe mixing bowl or Pyrex dish, add peanuts. Cook for 1 minute on high.
- Add sugar and Karo. Stir well.
- Cook 6-8 minutes on high. The amount of time will be determined by the power of your microwave. Usually around 7 minutes the mixture will be ready for the next step.
- Add butter and vanilla, stir well.
- Cook for another 1-2 minutes.
- Stir in baking soda. Stir really well and really quickly.
- Pour immediately onto buttered cookie sheet. Spread it quickly to make thin sheets.
- Let set until hard. Then break into pieces and place into an air tight container.
Southern Peanut Brittle is great for snacks, as a sweet treat or even a gift. One bite and you’ll know why it’s totally addictive!
