Happy Valentine’s Day!!

Have you made all of your Valentine’s?  Bought some chocolate?  Made dessert?  Picked out a card?

If you ran out of time or forgot {gasp} then here is a quick and easy recipe for Rice Krispies Bites using pantry ingredients and a few sprinkles.

We’ve all had Rice Krispy Treats.  But, were they covered in chocolate?  Were they shaded pink?  Or, may I ask, did they have sprinkles?

Why not whip up a quick batch? You can have them ready in no time.  Promise!  :)

Recipe for Rice Krispies Bites

Ingredients:

  • 6 Tablespoons of Butter
  • 10 Cups of Rice Krispy Cereal
  • 8 Cups of Mini Marshmallows (may use the large ones – just stir them often and remember it will take longer for them to melt)
  • Pink Gel Food Coloring
  • White Chocolate Chips (may use candy melts or almond bark – just follow package directions for melting)
  • Sprinkles – use whatever color, size and shape you desire

Directions:

  • Butter a 13 X 9 inch pan.  Set aside.
  • Place butter in a large dutch oven and melt over medium low heat.
  • Add marshmallows.  Stir well to coat in butter.  Stir occasionally until melted.
  • Add a few drops of pink food coloring.  Stir well.
  • Remove pan from heat.  Add the cereal and mix well.
  • Pour the mixture into your buttered pan and press firmly with your hands (either butter your hands first or use a couple of sprays of non stick cooking spray).  Allow to cool.
  • Cut into bite sized pieces.  Make squares as uniform as possible, but don’t worry if you have some odd shaped pieces.  They are just as tasty!  I’ve even cut them into the shapes of popsicles and added a stick.  Cuteness!
  • Melt your choice of chocolate.  Dip the little squares into chocolate.  Place them on wax paper to dry.  Add sprinkles quickly before the chocolate begins to dry. You may drizzle with a little extra chocolate!
