Well, hello there!  Welcome…

It has been unusually cold around here, even for January!  We don’t usually have several days below freezing, but it happened this year. Brrrrrrr! 

What a great reason to make this warm, delicious, creamy onion potato soup loaded with lots of goodies. You can whip up a batch in no  time, which makes it a perfect  “go to recipe” for a quick comfort food. It will warm you right up!  Just add a few crackers or a corn muffin and you have a quick and delicious meal!

My Creamy Onion Potato Soup is a rather rustic recipe and a family favorite.  Adapted from a Southern Living recipe…I’m not sure where or when I found it…but  I’m so glad I did!  It quickly found a place in my handwritten cook book.

It transports well and is great for leftovers.

You can have this one pot soup completely cooked, from start  to finish, in less than 45 minutes…maybe even faster!  Make it faster by chopping the onions the day before and store in fridge.  You can also use bottled minced garlic.

 

CREAMY ONION POTATO SOUP RECIPE

Ingredients:

  • 2 Tablespoons Butter
  • 1 Tablespoon Olive Oil
  • 3 Tablespoons All Purpose Flour
  • 1 1/2 to 2 Cups Sweet Onion, chopped
  • 3 Large Cloves Garlic, minced
  • 1 Large Container Chicken Broth (you can use 2 cans of broth or homemade)
  • 5-6 Large Baking Potatoes, peeled and cubed
  • 3-4 Green Onions, sliced
  • 1/8 Teaspoon Salt
  • 1/4 Teaspoon Ground White Pepper
  • 1 to 1 1/2 Cups Heavy Cream (may use only milk or a mixture of cream and milk)
  • Garnishes are Optional, but Highly Recommended  – Monterey Jack Cheese (or other white cheese -mozzarella works well), small dollop of sour cream, thinly sliced green onions, cooked/chopped bacon, and/or a sprinkle of freshly ground black pepper.

Directions:

  • Melt butter and olive oil in a dutch oven over medium heat.
  • Add flour and stir until smooth. Cook 1 minute, stirring constantly.
  • Add chopped sweet onion, cook until tender, about 2-3 minutes.
  • Add garlic and cook for another minute. watch closely and don’t let the garlic burn.
  • Gradually add chicken broth and stir constantly.
  • Add chopped potato, green onions, salt and pepper.
  • Bring to a boil, then cover with a lid and simmer for approximately 15 minutes or until potatoes are tender (I just stick one with a fork to check tenderness).
  • Stir occasionally while soup simmers.
  • When potatoes are tender, add the cream/milk.  Cook until completely heated.
  • Taste test and add more salt or pepper as needed. Serve in a big bowl or mug and garnish with your favorite toppings.  Enjoy!
